I entertained guests last weekend and battled to find a dessert to make (which would also fit into my diet) - fruit salad just would not have gone down well, considering they arrived wearing gloves and scarves!
I settled on Chocolate Mousse! Yes I can hear you all saying, "How did she fit that into her diet?" - Easy - It's low fat and sugar free. But the surprise of it all, no one even knew how I was saving their waist lines. They would have sworn it was the "Full Monty"!
Low Fat Sugar Free Chocolate Mousse
1 Sachet (15ml) unflavoured gelatin
2 tablespoon cold water
1/4 cup boiling water
2/3 cup Xylitol
1/3 cup Cocoa
1 1/2 cups cold Dairy Free Low Fat Cream (Orley Whip)
1/4 teaspoon chocolate extract (optional)
Stir together xylitol and cocoa in medium bowl; add "cream" and chocolate extract.
Beat on medium high speed of electric mixer, scraping bottom of bowl occasionally, until mixture is stiff.
Pour in gelatin mixture; beat until well blended.
Leave in the fridge to set for a few hours.
I served mine with little chocolate hearts, I made from melted real chocolate and home made espresso ice-cream.
Give this a try, and see who can spot the difference.

We can see fresh snow on the mountains from here - so no wonder it's not getting any warmer! Hope it warms up soon - we're having our spring celebration on Saturday and the daisies have hardly shown their faces this year!
Glad the chocolate mousse turned out well - it looks good!
Kit - After the few hours of sunshine yesterday I thought it was over - but it's raining again this morning! We're hoping to go to Mamre this Saturday to see the flowers, want to picnic if the weather is good - holding thumbs!
Well done Rose, this looks like a "heavenly" dessert....no guilt!!!!
I love the winter! Soup, pancakes in front of the fire, slow roasted meat done outside for most of the day under the coals or South African potjiekos, waterblommetjie bredie, pampoenkoekies and now a choccie mousse that doesn't make one fat!!! :):):)
You simply have the gift to make the right thing at just the right time!
Thanks so much
PS Where do I buy the Xylitol?
PPS 1/3 cup dark cocoa? (75% cocoa solids?)
Oooh looks delicious! Lucky I'm not fasting this week *drool*
PS have linked this blog of yours to my wordpress and not the 24 one - seeing that one gets alot of traffic ;)

Hi thank you for stopping by at my blog. Glad you liked the pictures of Much Wenlock interesting.
Btw - I see you've met Ainsley, lucky you!!
Just - I always buy the Nomu brand cocoa - which is really dark and chocolatey. It is a dutch process cocoa. Xylitol is available in the heath food section of most big super markets or health shops.
Nafisa - Will link you up too. Thanks.
Nina - Thanks, that's my first one!
Just - So glad you let me know, it is great to know how others find your recipes.
Jan - Meeting Ainsley is definitely a culinary and personal highlight for me. Cooking with him is really an experience.
I can't bypass a chocolate mousse - I'll even scarf up this one with low fat no sugar!
Would never have guessed this is guilt-free. You're a sly one, you are! :i)
